Tortilla Soup
1 tbspn veg. oil
1 medium onion chopped (about 1 cup)
2 stalks celery, thin sliced (about 1/2 cup)
1 jalepeno seeded and finely chopped*
1 pkg of chicken breasts (3) chopped into 1/4 inch pieces
2 minced cloves of garlic
1 28 oz can whole tomatoes undrained but cut up
2 1/2 cups water
1 15.5 oz can pinto beans (rinsed)
1 cup of frozen corn
2-3 tspn chili powder
1 tspn cumin
* dont be afraid of the japlepeno - its heat is cut by the simmering.
1. Heat oil in saucepan on med heat
2. add chicken till lightly brown
3. add more oil if needed, then add onion, celery, pepper and garlic
4. Sauté another 3-5 min
5. stir in remaining ingredients
6. simmer 15-20 min
7. remove from heat
8. stir in finely chopped cilantro (to taste -- 1tblspn to 1/4 cup)
sprinkle the following on top of each serving or offer on table:
1/4 cup tortilla chips crushed
finely shredded cheese
more cilantro
