LETTUCE WRAPS:
*time, ingredient and chopping intensive meal.
Chicken Mixture:
shiitake mushrooms 1 pkg
1 teaspoon cornstarch
2 teaspoons dry sherry
2 teaspoons water
salt and pepper
1-1 1/2 pounds boneless, skinless chicken, minced*
5 tablespoons oil
1 teaspoon fresh minced ginger or more to taste
2 cloves garlic, minced
2 green onions, minced
2 small dried chillis or I have substituted Sriracha Hot Sauce* to taste with good results
1 8 oz. can water chestnuts, minced
*Note: Mincing chicken is much easier if the chicken is slightly frozen (if defrosting - about half the normal defrost time will give you chicken thats easy to slice and stays firm)
Cooking Sauce:
1 tablespoon Hoisin sauce *
1 tablespoon soy sauce
1 tablespoon dry sherry
2 tablespoons oyster sauce *
2 tablespoons water
1 teaspoon sesame oil
1 teaspoon sugar
2 teaspoons cornstarch
Wraps:
Bibb lettuce leaves or other leaf lettuce (bibb works best)
Rinsed and patted dry with paper towels prior to eating
Sides:
finely chopped peanuts
matchstick sliced red peppers
chopped cellophane noodles 1/2 inch (usually in asian section of grocery)
shredded carrots
chopped cilantro
peanut dipping sauce -- I use Lee Ann Chin's dipping sauces and heat them for 30 sec or so in bowl
or you can find recipes for homeade peanut sauce on-line
Cooking Instructions:
Mix all ingredients for cooking sauce in bowl, and set aside.
In medium bowl, combine cornstarch, sherry, water, soy sauce, salt, pepper, and chicken. Stir to coat chicken thoroughly.
Stir in 1 teaspoon oil and let sit 15 minutes to marinate.
Heat wok or large skillet over medium high heat.
Add 3 tablespoons oil, then add chicken and stir fry for about 3-4 minutes.
Add ginger, garlic, chillis (if desired), and onion; stir fry about 1-2 minutes.
Add mushrooms and water chestnuts; stir fry an additional 2-3 minutes.
Add mixed cooking sauce to pan.
Cook until thickened and hot. Add more hot sauce to adjust hotness as needed.
Break cooked cellophane noodles into small pieces, and cover bottom of serving dish with them. Then pour chicken mixture on top of noodles (or offer as side).
Serve all sides on table and let folks build there own.
