CHICKEN AND SWEET POTATOES WITH SPICEY CHUTNEY
Stock Pot Ingredients:
3 whole cloves garlic
1 tbsp fresh rosemary crumbled
Olive oil
2 pkgs of skinless, boneless chicken breasts (6) chopped to 1/2 inch pieces
2 lbs of sweet potatoes (about 3 med to large ones) peeled and sliced into 1/2 inch cubes/chunks
1/2 tsp sugar
1/2 tsp paprika
1/2 tsp salt
3/4 can chicken broth diluted with 3/4 cup water
In large stockpot heat oil, rosemary and garlic till fragrant
Add chicken for 3-5 minutes
Add sweet potatoes
Sprinkle sugar, salt and paprika over potatoes and chicken
Heat for 7-8 minutes until chicken is lightly colored
Add chicken broth and water, cover and simmer till potatoes are soft (15/20 min about)
While the chicken and potatoes are steaming mix chutney...
Chutney Ingredients:
3 cloves minced garlic
1 1/4 cup chicken broth
1 large onion
1 large red bell pepper sliced fine
1 small green bell pepper sliced
1/2 cup pitted prunes
1 jalapeno - minced
2 tbsp of unsweetened coco
1/4 tsp salt
In skillet combine all ingredients
Cook over medium heat until veggies are very soft
Transfer all ingredients to blender or food processor - puree
Serve chicken and potatoes topped with generous amounts of chutney
Goes well with crusty French bread and chardonnay
