Cavatapi

Cavatapi noondles (corkscrew kind)
Olive Oil
1 package of chicken (3 breasts) cut into 1/4 inch pieces
1 red Pepper sliced large
2 small zuchinni (about 2 cups) sliced about 1/2 think
1 package of sliced mushrooms about 2 cups
1 package of high quality shredded parmesan
pesto - fresh if you got it or grocerer's pesto will do.

1. Start Water for noondles - add a drop of oil to water.
2. Brown chicken in olive oil
3. Start noondles - cook to al dente*
4. Add mushrooms and peppers to pan - sautee' till browned
5. Add zuchinni and several dallops of pesto to pan. cover and steam for 2-3 min.
6. Uncover, and sautee' untill zuchini is soft but not tender
7. Rinse Noodles, toss in large bowl with more pesto until lightly coated
8. Add all the chicken and veggie mix to bowl - toss - add more pesto if neccessary.
9. Pour at least 1 cup of parmesan in bowl - lightly toss.
10. Serve in large bowl. Offer more parmesean at table.
*Al Dente - means cooked, but not soft... in other words - not overcooked.
